  • 3 medium parsnips, peeled and cut into 2-inch chunks
  • 2 medium beets, peeled and cut into 1-inch chunks
  • 1 large sweet potato, peeled and cut into 1-inch chunks
  • 1 large red onion, cut into 1-inch wedges
  • 45 cloves garlic, smashed
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 2 sprigs fresh rosemary, leaves stripped and chopped
  • 45 sprigs fresh thyme, leaves stripped
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Prepare all your vegetables: peel the carrots, parsnips, sweet potato, and beets. Cut them into uniform 1 to 2-inch chunks.
  3. Cut the red onion into 1-inch wedges, leaving a bit of the root attached to each wedge. Smash the garlic cloves with the flat side of a knife.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, honey (or maple syrup), chopped rosemary, thyme leaves, salt, and pepper.
  5. Place all prepared vegetables and smashed garlic cloves in a large mixing bowl. Pour the balsamic mixture over them and toss until every piece is well coated.
  6. Spread the vegetables in a single layer on the prepared baking sheet. Avoid overcrowding; use two sheets if necessary.
  7. Roast for 20 minutes. Remove the pan from the oven and stir the vegetables with a spatula.
  8. Return the pan to the oven and roast for another 20-25 minutes, until the vegetables are tender and have deep golden-brown, caramelized edges.
  9. Remove the pan from the oven and let the vegetables rest for 5 minutes.
  10. Transfer to a serving platter. Optionally, drizzle with extra balsamic glaze and sprinkle with flaky sea salt. Serve warm.

For extra crispy vegetables, ensure the oven is fully preheated and do not overcrowd the pan. Pat vegetables dry after washing to remove excess moisture. Watch the garlic cloves to prevent burning; tuck them under larger vegetable pieces. Leftovers can be stored in an airtight container in the refrigerator for up to 5 days and reheated in a 350°F oven for 5-10 minutes.
