A quick and festive Halloween treat made with refrigerated sugar cookie dough and a homemade pumpkin pie filling, decorated with orange cream cheese frosting to resemble jack-o’-lanterns.

Ingredients

Scale
  • 1 tube (16 oz) refrigerated sugar cookie dough
  • 1 can (15 oz) 100% pure pumpkin puree
  • 1–2 teaspoons pumpkin pie spice
  • 1/2 cup packed brown sugar
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup orange cream cheese frosting
  • Orange food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together pumpkin puree, brown sugar, pumpkin pie spice, softened butter, and vanilla extract until smooth.
  3. Roll out the cookie dough on a lightly floured surface to about 1/4 inch thickness.
  4. Cut out circles using a 2-3 inch round cookie cutter and place on prepared baking sheets.
  5. Spoon about 1 teaspoon of pumpkin filling onto the center of each dough circle.
  6. Fold the edges of the dough over the filling to create a half-moon shape and press edges firmly to seal.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool cookies on the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Mix orange food coloring into the cream cheese frosting if desired.
  10. Pipe eyes, nose, and mouth onto the cooled cookies to create jack-o’-lantern faces.
  11. Let frosting set for 10 minutes before serving.

Notes

Ensure pumpkin puree is thick; strain if watery to prevent soggy cookies. Use softened butter, not melted, for the filling to maintain texture. Do not overcrowd baking sheets. Cool cookies completely before frosting to prevent melting.
