These Easy Candy Corn Rice Krispie Treats are a quick, no-fuss fall dessert that combines chewy marshmallow, crunchy cereal, and sweet candy corn for a festive treat ready in just 15 minutes.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 1 package (10 ounces) marshmallows
  • 6 cups crispy rice cereal
  • 1 cup candy corn
  • 1/4 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving about 2 inches of overhang on the long sides. Lightly grease the parchment with butter or cooking spray.
  2. Place a large pot over medium-low heat and melt 3 tablespoons of butter slowly, swirling occasionally, until fully melted but not bubbling or browning.
  3. Pour the entire 10-ounce bag of marshmallows into the melted butter. Stir constantly with a rubber spatula, scraping the bottom and sides, until the marshmallows are fully melted and smooth (about 3-4 minutes).
  4. Remove the pot from the heat. Stir in the vanilla extract and pinch of salt until well combined.
  5. Add 3/4 cup of candy corn to the warm marshmallow mixture and stir gently for 15-20 seconds until the candy corn softens but does not completely dissolve. Reserve the remaining 1/4 cup for the top.
  6. Add 6 cups of crispy rice cereal to the pot. Fold together gently with a cutting motion until the cereal is evenly coated (about 1-2 minutes).
  7. Scrape the mixture into the prepared baking dish. Lightly grease your hands or a spatula with butter or cooking spray, then press the mixture into an even layer, working from the center outward. Do not press too hard.
  8. While the treats are still warm, press the remaining 1/4 cup of candy corn into the top, spacing them evenly and pressing them about halfway into the surface.
  9. Allow the treats to cool completely at room temperature (about 30-45 minutes) until firm to the touch.
  10. Lift the entire block out of the dish using the parchment overhang. Place on a cutting board and cut into squares using a sharp knife (run the knife under hot water between cuts for cleaner edges).

Notes

For best results, use fresh candy corn that has a slight give when squeezed. Do not refrigerate the treats as they will become hard and dry. They actually taste better the day after making them. For clean cuts, run the knife under hot water between each cut.
