Ingredients

Scale
  • 4 salmon fillets (6 oz each, skin-on or skinless)
  • 1/4 cup honey
  • 3 tablespoons soy sauce (low-sodium; tamari for gluten-free)
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (toasted)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 2 cups cooked jasmine rice (or brown rice, quinoa, or cauliflower rice)
  • 1 large cucumber, thinly sliced (English cucumber preferred)
  • 2 tablespoons rice vinegar (for pickling)
  • 1 teaspoon sugar
  • 1 avocado, sliced
  • 1/4 cup edamame (shelled)
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (toasted white or black)
  • Fresh cilantro (optional)

Instructions

  1. Start the rice first. Rinse 1 cup jasmine rice under cold water until the water runs clear (about 30 seconds). Add to a small saucepan with 1 1/2 cups water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes—don’t peek! Fluff with a fork.
  2. While the rice cooks, make the quick pickled cucumbers. In a small bowl, combine 2 tablespoons rice vinegar, 1 teaspoon sugar, and a pinch of salt. Stir until dissolved. Add thinly sliced cucumber and toss to coat. Let it sit while you prepare everything else—the longer it sits, the better.
  3. Pat the salmon dry with paper towels. This is crucial—wet salmon won’t get that beautiful golden crust. Season both sides with a pinch of salt and black pepper. If using skin-on salmon, score the skin lightly with a sharp knife (this prevents curling).
  4. Make the honey garlic sauce. In a small bowl, whisk together 1/4 cup honey, 3 tablespoons soy sauce, 4 minced garlic cloves, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and 1/2 teaspoon red pepper flakes (if using). Set aside.
  5. Cook the salmon. Heat 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. When the oil shimmers (about 2 minutes), place the salmon fillets skin-side down (if using skin). Cook for 4 minutes without moving them—let that crust develop. Flip carefully and cook for another 3 minutes. The salmon should be golden brown and just cooked through.
  6. Add the sauce. Reduce heat to medium-low. Pour the honey garlic sauce into the pan around the salmon (not directly on top, or it’ll burn). Let it bubble for 1 minute, then add the cornstarch slurry (1 teaspoon cornstarch mixed with 2 teaspoons water). Stir gently and let the sauce thicken for 30-60 seconds. Spoon the sauce over the salmon as it thickens.
  7. Assemble your bowls. Divide the cooked rice between bowls. Place a salmon fillet on each. Top with quick-pickled cucumbers, sliced avocado, edamame, and green onions. Drizzle any remaining sauce from the pan over everything. Sprinkle with sesame seeds and fresh cilantro.
  8. Serve immediately. The salmon is best fresh when the skin is crispy and the sauce is sticky. If you’re meal prepping, store components separately and assemble just before eating.

Notes

Pat salmon dry for best crust. Don’t walk away from the sauce once it’s in the pan—honey burns fast. If sauce seems thin, give it another 30 seconds; it’ll thicken as it cools. Salmon should flake easily but be moist in center. For nervous cooks, pull off heat at 135°F internal temperature; it’ll carry over to 140°F while resting. Store components separately for meal prep up to 3 days. Reheat salmon in skillet with splash of water to revive sauce.
