Ingredients

Scale
  • 1 large loaf stale cornbread (buttermilk recommended), crumbled into 1-inch pieces
  • 12 ounces andouille sausage, sliced into half-moons
  • 4 tablespoons unsalted butter
  • 1 large yellow onion, finely diced
  • 3 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 3 large eggs, beaten
  • 1 teaspoon dried sage
  • 1/2 teaspoon black pepper, freshly cracked
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat oven to 375°F (190°C). If using fresh cornbread, toast it at 350°F for 10 minutes and let cool completely before crumbling into 10-12 cups of crumbs.
  2. Heat a large skillet over medium heat. Add sliced andouille sausage and cook for 5-7 minutes until browned and crispy. Drain most of the grease, leaving about 1 tablespoon in the pan. Transfer sausage to a large mixing bowl with the cornbread.
  3. In the same skillet, melt the butter. Add onions and celery, sautéing for 5 minutes until soft and translucent. Add garlic in the last minute. Transfer this mixture to the cornbread bowl.
  4. In a separate bowl, whisk together eggs, chicken broth, sage, black pepper, and cayenne. Pour over the dry ingredients and mix gently with your hands until moist but not mushy.
  5. Grease a baking dish (or cast-iron skillet). Pour in the mixture and smooth the top. Bake for 30-35 minutes until golden brown. If browning too quickly, cover with foil. Let rest for 10 minutes before serving.

Notes

Use stale cornbread for best texture; fresh bread should be toasted. Do not skip searing the sausage for added crunch. Add broth slowly as bread absorption varies. Let the dressing rest for 10 minutes before serving to allow flavors to meld.
