Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs, room temperature
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • ¼ cup cocoa powder
  • 2–3 tablespoons milk or cream
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 1 bag chocolate wafers or chips
  • 1 small bag candy corn
  • Handful of mini chocolate chips
  • Orange food coloring gel (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 24-cup mini muffin tin with silicone liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate medium bowl, whisk buttermilk, eggs, vegetable oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  5. Divide batter into mini muffin cups, filling each about ¾ full.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
  7. Cool cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. While cupcakes cool, beat softened butter until creamy, then add powdered sugar, cocoa powder, vanilla, and salt.
  9. Mix in milk one tablespoon at a time until frosting reaches a pipeable consistency.
  10. Pipe a generous dollop of frosting onto each cooled cupcake.
  11. Melt chocolate wafers in the microwave in 30-second intervals, stirring until smooth.
  12. Pipe or dip toothpicks into melted chocolate to create feather shapes on the back of the cupcakes.
  13. Attach candy corn for the beak and mini chocolate chips for eyes to complete the turkey look.

Notes

Ensure cupcakes are completely cool before frosting to prevent chocolate feathers from melting. Room temperature ingredients are crucial for smooth batter and frosting. If buttermilk is unavailable, substitute with milk plus lemon juice. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use vegan butter and flax eggs.
