A warm, comforting apple crisp with a perfectly crunchy oat crumble topping. This easy recipe uses simple ingredients and comes together in about 20 minutes, making it the ideal fall dessert for any occasion.

Ingredients

Scale
  • 6 medium apples (about 2.5 pounds or 1.1 kg), peeled and sliced (mix of Granny Smith and Honeycrisp)
  • 3 tablespoons granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prep the apples: Peel, core, and slice apples into 1/4-inch thick pieces. Toss in a large bowl with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and flour. Stir until coated. Let sit while making topping.
  3. Make the oat crumble: In a medium bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Add cold butter cubes. Using a pastry cutter or fingertips, work butter into dry ingredients until mixture resembles coarse sand with some larger clumps. Stir in nuts if using.
  4. Assemble the crisp: Pour apple mixture into an 8×8-inch baking dish and spread evenly. Sprinkle crumble topping evenly over apples without pressing down.
  5. Bake: Place dish on a baking sheet and bake for 40-45 minutes, until topping is golden brown and juices are bubbling. If topping browns too fast, tent with foil after 30 minutes.
  6. Cool slightly: Let rest on a wire rack for at least 15 minutes before serving to allow juices to thicken.

Notes

For best results, use a mix of tart and sweet apples. Toast oats before mixing for extra nutty flavor. Let crisp rest after baking to thicken juices. For gluten-free, use 1:1 gluten-free flour blend and certified gluten-free oats. For vegan, use cold coconut oil or vegan butter.
