Healthy Turkey Chili Cups: Easy Game Day Appetizer

These Healthy Turkey Chili Cups are little handheld bites of chili, baked into a crunchy wonton shell, and topped with all the good stuff. They are perfect for game day or any party where you want people to go back for seconds without realizing they are eating something good for them.

  • 1 lb ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 can (14.5 oz) diced tomatoes (undrained)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon Worcestershire sauce
  • Salt and black pepper to taste (about 1/2 tsp salt, 1/4 tsp pepper)
  • 1 package (about 48) wonton wrappers
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream or Greek yogurt, sliced green onions, diced avocado, fresh cilantro, jalapeño slices

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the turkey and aromatics: Place a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up, until no longer pink (5-6 minutes). Add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds.
  3. Build the chili flavor: Push the turkey mixture to one side of the pan. Add the tomato paste to the empty space and let it cook for about a minute, stirring until it darkens slightly. Then stir the paste into the turkey mixture.
  4. Simmer the filling: Pour in the diced tomatoes (with liquid), kidney beans, chili powder, cumin, smoked paprika, and Worcestershire sauce. Stir together. Bring to a simmer, then reduce heat to medium-low and cook for about 10 minutes, stirring occasionally, until thickened. Season with salt and pepper to taste.
  5. Prepare the wonton cups: Lightly spray a mini muffin tin with non-stick cooking spray. Gently press one wonton wrapper into each cup, forming a little bowl shape.
  6. Fill the cups: Using a small cookie scoop or spoon, carefully fill each wonton cup with the chili mixture, leaving a little room at the top for cheese (about a heaping tablespoon per cup).
  7. Top with cheese: Sprinkle a generous pinch of shredded cheddar cheese over each filled cup.
  8. Bake until crispy: Place the muffin tin in the preheated oven and bake for 12-15 minutes, until wonton edges are golden brown and crispy and cheese is melted and bubbly.
  9. Cool slightly before serving: Let the chili cups cool in the pan for about 5 minutes. Use a small offset spatula or butter knife to gently lift them out.
  10. Add your toppings: Top each cup with a small dollop of sour cream or Greek yogurt, a slice of green onion, and a piece of fresh cilantro. Add jalapeño slices for heat if desired.

Notes

Do not overfill the cups to prevent sogginess. Watch the baking time closely as wonton wrappers can burn quickly. Make the filling ahead of time (up to 2 days) for easier party prep. Keep wonton wrappers covered with a damp paper towel to prevent drying. Use a light hand with non-stick spray.
