Healthy Rainbow Veggie Bento Box with Creamy Ranch Dip

A colorful and satisfying bento box packed with fresh vegetables, hard-boiled eggs, and cheese cubes, paired with a creamy Greek yogurt ranch dip. Perfect for meal prep and a healthy lunch that keeps you full without the afternoon slump.

  • 2 medium carrots, peeled and cut into thin sticks
  • 1 large English cucumber, sliced into rounds or half-moons
  • 1 large red bell pepper, seeded and sliced into strips
  • 1 large yellow bell pepper, seeded and sliced into strips
  • 1 cup cherry tomatoes, halved if large
  • 1 cup small broccoli florets, blanched
  • 1 cup small cauliflower florets, blanched
  • 1 cup sugar snap peas, trimmed
  • 2 large hard-boiled eggs, peeled and halved
  • ½ cup cheddar or colby jack cheese, cut into small cubes
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons buttermilk
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh lemon juice

Instructions

  1. Blanch the broccoli and cauliflower: Bring a small saucepan of water to a boil. Drop in the broccoli and cauliflower florets and cook for exactly 60 seconds. While they’re boiling, fill a bowl with ice water. Use a slotted spoon to transfer the blanched veggies directly into the ice water. Let them sit for 2 minutes, then drain and pat dry with a clean kitchen towel.
  2. Hard-boil the eggs: Place the eggs in a small saucepan and cover with cold water by about an inch. Bring to a boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 10 minutes. Transfer the eggs to an ice bath and let cool for 5 minutes. Peel under running cold water. Slice in half lengthwise.
  3. Prep all the vegetables: While the eggs are cooking, wash and prep your veggies. Peel the carrots and cut them into sticks about 3 inches long and ½ inch thick. Slice the cucumber into rounds or half-moons. Seed the bell peppers and cut them into strips about ½ inch wide. Halve the cherry tomatoes if they’re large. Trim the ends off the sugar snap peas.
  4. Make the creamy ranch dip: In a medium mixing bowl, combine the Greek yogurt, buttermilk, fresh dill, fresh parsley, garlic powder, onion powder, salt, pepper, and lemon juice. Whisk until smooth and well combined. Taste and adjust seasoning. Transfer to a small jar or container with a tight-fitting lid. Refrigerate for at least 30 minutes to let the flavors meld.
  5. Assemble the bento box: Arrange the vegetables in your bento box by color for that rainbow effect. Start with red bell pepper strips, then orange carrots, yellow bell pepper, green cucumber and broccoli, and finally the cauliflower and cherry tomatoes. Place the hard-boiled egg halves and cheese cubes in any empty spaces.
  6. Pack the dip separately: Put the ranch dip in a small leak-proof container and nestle it into the bento box or pack it alongside. Never put the dip directly on the veggies unless you’re eating immediately.
  7. Store properly: If making for meal prep, store the assembled bento box and the ranch dip in the refrigerator separately. The veggies stay fresh for up to 4 days, but eat the eggs and cheese within 2 days for best quality.

Notes

Blanching timing is critical—60 seconds exactly. Cut vegetables to uniform sizes for even dipping and freshness. Let the ranch dip rest overnight for best flavor. Don’t overpack the box to keep veggies crunchy. Pat vegetables completely dry after washing to prevent sogginess.
