These gooey monkey bread cinnamon roll pull-apart bites are a quick and easy breakfast treat made with canned biscuit dough, coated in a buttery cinnamon-brown sugar mixture, and baked until soft and caramelized. Perfect for lazy weekends, holiday mornings, or any time you need a comforting, indulgent pastry.

Ingredients

Scale
  • 1 (16 oz) tube canned buttermilk biscuits (e.g., Pillsbury Grands)
  • 1/2 cup unsalted butter, melted
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Generously butter a bundt pan or 9-inch round cake pan.
  2. Open the can of biscuits and separate them. Cut each biscuit into quarters (about 32 pieces total).
  3. In a medium bowl, combine 1 cup packed brown sugar, 1/4 cup granulated sugar, and 2 tablespoons ground cinnamon. Whisk until evenly mixed.
  4. Melt 1/2 cup unsalted butter in a small saucepan or microwave. Stir in 1 teaspoon vanilla extract and a pinch of salt. Set aside.
  5. Working in batches, drop the biscuit quarters into the melted butter, toss to coat, then transfer them to the sugar-cinnamon mixture. Roll them around until fully coated.
  6. Place the coated pieces in the prepared pan, arranging them in a single layer (overlapping is okay). Drizzle any remaining butter over the top.
  7. Bake for 18-22 minutes, until golden brown on top and bubbling at the edges. The center should be set but still slightly soft.
  8. Let the bread cool in the pan for exactly 5 minutes.
  9. While it cools, make the glaze: In a small bowl, whisk together 1 cup powdered sugar, 2 tablespoons milk, and 1/2 teaspoon vanilla extract. Add more milk a teaspoon at a time until you get a pourable consistency.
  10. Invert the pan onto a serving plate. Tap the bottom gently if it doesn’t release.
  11. Drizzle the glaze over the warm bread. Serve warm.

Notes

Don’t overbake; monkey bread continues to cook after removal. Use room temperature butter for even coating. Don’t skip the 5-minute cooling time before inverting. Work in batches for even coating. Use a sharp knife or shears to cut biscuits cleanly. Make glaze while bread cools for perfect timing.
