Soft, chewy, and delightfully gooey gluten-free sugar cookies made with almond flour. These festive treats are easy to make, perfect for holiday gifting, and safe for those with celiac disease or gluten sensitivity.

Ingredients

Scale
  • 1 cup (100g) blanched almond flour
  • 1/2 cup (60g) gluten-free 1-to-1 baking flour
  • 1/2 cup (113g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) granulated sugar
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • 1/2 tsp almond extract (optional)
  • 2–3 tbsp heavy cream
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (120g) confectioners’ sugar (for glaze)
  • 1–2 tbsp milk or cream (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar on medium-high speed until light, fluffy, and pale in color. Scrape down the sides of the bowl.
  3. Add the egg yolk, vanilla extract, and almond extract. Mix on low speed until combined. Add heavy cream and mix until smooth.
  4. In a separate bowl, whisk together almond flour, gluten-free flour blend, baking powder, and salt. Add to the wet mixture in two batches, mixing on low speed until just combined. Do not overmix.
  5. If the dough is sticky, chill in the refrigerator for 30 minutes.
  6. Scoop dough using a medium cookie scoop (approx. 1.5 tablespoons) onto prepared baking sheets, leaving 2 inches of space between cookies.
  7. Bake for 10-12 minutes. Cookies should look set at the edges but still soft and slightly underdone in the center. They should not be golden brown.
  8. Let cookies cool on the baking sheet for 10 minutes to set, then transfer to a cooling rack to cool completely.
  9. Once cool, mix confectioners’ sugar, milk/cream, and vanilla to create a glaze. Dip or drizzle over cookies and let set for 15 minutes.

Notes

Do not overbake; the cookies will firm up as they cool. Measure flour by spooning it into the cup and leveling off to avoid dense cookies. Ensure butter is softened but not melted. Store in an airtight container with a slice of bread to maintain softness.
