These Easy Turkey Ranch Pinwheel Lunchbox Wraps are quick, forgiving, and make you look like you have your life together. They’re perfect for school lunches, road trips, picnics, and brunch platters.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1 packet (1 oz) ranch dressing mix
  • 2 tablespoons milk
  • 1/4 cup sour cream
  • 8 large flour tortillas (burrito-size)
  • 1 pound deli turkey breast, thinly sliced
  • 8 slices provolone cheese
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots (optional)

Instructions

  1. Make the ranch cream cheese spread: In a large mixing bowl, combine the softened cream cheese, ranch dressing mix, milk, and sour cream. Beat with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Adjust consistency if needed.
  2. Prep your work surface: Lay a large flour tortilla flat on your cutting board. Use a spatula to spread about 2 tablespoons of the ranch cream cheese mixture evenly across the entire surface, leaving a 1-inch border around the edges.
  3. Layer the fillings: Place 2-3 slices of turkey breast flat on top of the cream cheese, overlapping slightly. Add one slice of provolone cheese on top of the turkey. Sprinkle a generous handful of shredded lettuce and a pinch of shredded carrots along the center line.
  4. Roll it up tight: Starting from the bottom edge, fold the tortilla over the fillings, tucking it snugly. Use your fingers to hold the fillings in place as you roll forward, keeping even pressure. Roll all the way to the top edge, ending with the seam side down.
  5. Wrap and chill: Tightly wrap each rolled tortilla in plastic wrap, twisting the ends to secure. Place the wrapped rolls on a baking sheet or large plate and refrigerate for at least 30 minutes.
  6. Slice into pinwheels: After chilling, unwrap each roll and place it on your cutting board. Using a sharp knife, slice off the uneven ends (about 1/2 inch from each side). Then slice the remaining roll into 1-inch thick pinwheels.
  7. Arrange and serve: Place the pinwheels in a lunchbox or serving platter, spiral side up. They’ll stay fresh in the fridge for up to 3 days.

Notes

Let cream cheese soften to room temperature for easy spreading. Pat lettuce dry to avoid sogginess. Chill rolled tortillas for at least 30 minutes before slicing for clean cuts. For a healthier twist, use whole wheat or spinach tortillas. For gluten-free, use gluten-free tortillas and roll gently.
