These turkey and cheese pinwheel roll-ups are quick, fun, and perfect for lunchboxes. Made with simple ingredients like flour tortillas, cream cheese, deli turkey, and shredded cheddar, they come together in under 10 minutes and are endlessly customizable.

  • 4 oz cream cheese, softened
  • 46 oz deli turkey slices
  • 1/2 cup shredded cheddar cheese
  • 1 handful fresh spinach leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15 minutes (or microwave for 10 seconds).
  2. Lay one tortilla flat on a cutting board. If stiff, warm in microwave for 5-10 seconds.
  3. Spread a thin, even layer of cream cheese over the entire tortilla, leaving a 1/2-inch border around the edges.
  4. Place 2-3 slices of turkey over the cream cheese, overlapping slightly to cover the tortilla.
  5. Sprinkle shredded cheddar evenly over the turkey, then add a few spinach leaves on top. Press down gently.
  6. Season lightly with a pinch of salt and a few grinds of black pepper.
  7. Starting at one edge, roll the tortilla tightly toward the other end, keeping the filling tucked in. Press the seam to seal.
  8. Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Place seam-side down on a plate. Repeat with remaining tortillas.
  9. Refrigerate for at least 15-20 minutes to firm up the cream cheese.
  10. Unwrap each roll and slice crosswise into 1-inch pieces using a sharp knife and a gentle sawing motion.
  11. Arrange on a platter or pack in a lunchbox. Serve cold or at room temperature.

Chilling is essential for clean slices. Use a sharp knife to avoid squishing. For best flavor, make the night before. Customize with different meats, cheeses, spreads, or veggies.
