A simple, no-cook charcuterie board for two featuring creamy brie, salty prosciutto, crunchy crackers, and sweet grapes. Perfect for a relaxed date night or cozy evening in.

  • 4 oz Brie cheese (or Camembert)
  • 2 oz Aged cheddar (sharp, sliced)
  • 2 oz Goat cheese log (optional)
  • 4 slices Prosciutto (about 2 oz)
  • 4 slices Genoa salami (about 2 oz)
  • 1/2 cup Red seedless grapes
  • 1/4 cup Dried apricots (or figs)
  • 2 tbsp Honey (optional)
  • 1/2 cup Seed crackers (or water crackers)
  • 1/4 cup Marcona almonds (or regular almonds)
  • Cornichons or pickled okra (a few pieces, optional)
  • Fresh rosemary sprig (for garnish, optional)

Instructions

  1. Bring the cheese to room temperature (15 minutes before serving). Take the brie and goat cheese out of the fridge, unwrap them, and let them sit on the counter for at least 15-20 minutes before assembling.
  2. Prepare your board or plate. Give it a quick wipe. Place small bowls or ramekins on the board first. Fill one with honey, one with cornichons (if using), and leave the third empty for the almonds, or scatter them around.
  3. Place the cheeses. Put the brie on the board at about the 10 o’clock position. Place the goat cheese log at 2 o’clock. Arrange the sliced cheddar in a small fan or stack near the 4 o’clock position. Leave about an inch of space between each cheese.
  4. Add the meats. Fold the prosciutto slices into loose, wavy ribbons and place them near the brie. For the salami, fold each slice in half, then in half again, and stand them up in a little cluster. Place the meats on opposite sides of the board.
  5. Scatter the fruit. Place small clusters of red grapes in the gaps between the cheese and meat. Scatter the dried apricots around the grapes.
  6. Add the crunch. Arrange the seed crackers in a small fan or stack near the edge of the board. Scatter the Marcona almonds in the remaining empty spaces.
  7. Drizzle and garnish. Drizzle a little honey over the brie (or serve it on the side in the ramekin). Tuck a sprig of fresh rosemary or a few edible flowers into an empty corner for color.
  8. Serve immediately. Place the board in the center of the table or coffee table. Add two small plates, two napkins, and two wine glasses.

Notes

For best results, bring cheese to room temperature before serving. Assemble the board no more than 15-20 minutes before serving to keep crackers crisp. For a vegetarian version, skip the meat and add marinated artichokes, roasted red peppers, and an extra cheese. For a vegan version, use cashew-based cheese and vegan crackers.
