This easy slow cooker buffalo chicken dip is the perfect party appetizer—creamy, spicy, and incredibly simple to make with just a few ingredients. It’s the dip that disappears fastest at every gathering.

  • 2 cans (12.5 oz each) canned chicken, drained
  • 16 oz cream cheese, softened to room temperature
  • 1 cup buffalo hot sauce (such as Frank’s RedHot)
  • 1 packet ranch seasoning mix (or 3 tablespoons homemade)
  • 2 cups shredded cheddar cheese, divided
  • Optional garnishes: chopped green onions, crumbled blue cheese, or ranch dressing

Instructions

  1. Soften the cream cheese: Remove from fridge 30 minutes before starting, or microwave on low for 20-30 seconds until soft but not melted.
  2. Drain the canned chicken: Pour off liquid and flake chicken with a fork into a medium mixing bowl.
  3. Combine base ingredients: Add softened cream cheese, buffalo sauce, and ranch seasoning to the chicken. Stir until well combined (small lumps of cream cheese are okay).
  4. Add cheese: Stir in 1½ cups shredded cheddar cheese. Reserve remaining ½ cup for topping.
  5. Transfer to slow cooker: Spray a 3-4 quart slow cooker with non-stick spray. Spoon mixture in and spread evenly.
  6. Top with remaining cheese: Sprinkle reserved ½ cup cheddar over the top.
  7. Cook: Cover and cook on low for 2 hours or high for 1 hour, until hot and bubbly.
  8. Stir and serve: Stir well, garnish as desired, and serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.

Notes

For best texture, use full-fat cream cheese and shred cheddar from a block. Drain canned chicken well to avoid watery dip. Dip can be assembled the night before and refrigerated; cook as directed. Leftovers keep in the fridge for up to 4 days and taste even better the next day.
