  • 6 cups low-sodium chicken or beef broth
  • 1 can (14.5 ounces) crushed tomatoes
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 tablespoons tomato paste
  • 8 ounces dried lasagna noodles, broken into 2-inch pieces
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Brown the beef: Add the ground beef to the pot, breaking it up with a wooden spoon. Cook for 6-8 minutes until no longer pink. Spoon out excess fat, leaving about a tablespoon. Season with salt, pepper, oregano, basil, and red pepper flakes. Stir to combine.
  3. Build the broth: Pour in the crushed tomatoes, diced tomatoes (with juices), and tomato paste. Stir, scraping up any browned bits from the bottom. Cook for 2 minutes, letting the tomato paste darken slightly.
  4. Add the broth and simmer: Pour in the broth and stir. Bring to a boil, then reduce heat to a gentle simmer. Cook uncovered for 10 minutes to meld flavors.
  5. Cook the pasta: Add the broken lasagna noodles to the pot, stirring to submerge. Cook according to package directions for al dente (usually 10-12 minutes), stirring occasionally.
  6. Finish with cream and cheese: Reduce heat to low. Stir in the heavy cream, then add the shredded mozzarella and grated Parmesan. Stir gently until cheese is fully melted and soup is creamy. Taste and adjust seasoning.

Notes

If the soup gets too thick as it sits, stir in a splash of warm broth or water when reheating. For best results, use freshly shredded mozzarella. Add cream over low heat to prevent curdling. The soup can be made ahead and tastes even better the next day.
