A quick and delicious one-pan meal featuring honey garlic glazed salmon and roasted broccoli, ready in 25 minutes with minimal cleanup.

Ingredients

Scale
  • 4 salmon fillets (6 oz each, skin on or off)
  • 4 cups broccoli florets (about 2 medium heads, cut into bite-sized pieces)
  • 2 tablespoons olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup honey (runny, pure honey)
  • 3 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 4 cloves garlic (minced finely)
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • 1 teaspoon sesame oil (optional)
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, optional)
  • Sesame seeds (toasted, for garnish, optional)
  • Thinly sliced green onions (for garnish, optional)
  • Fresh lemon wedges (for serving, optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil.
  2. Wash and cut broccoli into florets about the size of your thumb. Pat salmon fillets dry with paper towels.
  3. Toss broccoli florets with 1 tablespoon olive oil, ¼ teaspoon salt, and a pinch of pepper. Spread on one side of the sheet pan in a single layer. Roast for 5 minutes.
  4. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, sesame oil, and red pepper flakes (if using). Set aside about 2 tablespoons of the glaze for later. If desired, stir in cornstarch slurry for a thicker glaze.
  5. Remove pan from oven. Push broccoli to one side and place salmon fillets skin-side down on the other side. Brush each fillet generously with the glaze. Season with remaining salt and pepper.
  6. Return pan to oven and roast for 12-15 minutes, depending on thickness. At the 8-minute mark, brush salmon with reserved glaze. Salmon is done when it flakes easily with a fork and internal temperature reaches 145°F (63°C). Broccoli should be tender with crispy edges.
  7. Remove from oven and let rest for 2-3 minutes. Sprinkle with sesame seeds and green onions, squeeze lemon wedges over everything, and serve straight from the pan.

Notes

Pat salmon dry for best caramelization. Don’t crowd the pan to avoid steaming. Watch the garlic to prevent burning; brush glaze in stages. Use a meat thermometer for perfect doneness. Let salmon rest before serving. Leftovers keep in the fridge for up to 4 days and taste even better the next day.
