These no-bake peanut butter protein balls are a quick, healthy snack that tastes like peanut butter cookie dough. Made with simple pantry ingredients, they come together in under 10 minutes and are perfect for meal prep.

Ingredients

Scale
  • 1 cup rolled oats (90g)
  • 1/2 cup creamy peanut butter (130g)
  • 1/4 cup honey (85g)
  • 1/4 cup vanilla protein powder (30g)
  • 2 tablespoons ground flaxseed (14g)
  • 1/4 cup dark chocolate chips (45g)
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In a medium mixing bowl, add rolled oats, protein powder, ground flaxseed, and a pinch of sea salt. Whisk together with a fork to break up any clumps.
  2. Add the wet ingredients: Spoon in creamy peanut butter and honey. Place them side by side for easier mixing.
  3. Mix everything together: Use a spatula or wooden spoon to stir until fully combined. The mixture will come together into a thick, sticky dough. If too dry, add a teaspoon of honey or peanut butter; if too sticky, add a tablespoon of oats.
  4. Fold in the chocolate chips: Add dark chocolate chips and fold gently until evenly distributed.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 10-15 minutes to make the dough easier to handle.
  6. Roll into balls: Scoop about 1 tablespoon of dough and roll between your palms into smooth balls. Place on a parchment-lined baking sheet or plate. You should get about 12-14 balls.
  7. Chill to set: Refrigerate the balls for at least 30 minutes before eating to firm up.

Notes

Use room temperature ingredients for easier mixing. If dough is too sticky, wet your hands lightly before rolling. For best texture, use thick natural peanut butter. The flavors improve after a day in the fridge.
