Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 preferred)
  • ½ cup (60g) breadcrumbs (plain or Italian-style)
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp Worcestershire sauce
  • ¼ cup (25g) grated Parmesan cheese (optional)
  • 1 can (8 oz / 226g) crescent roll dough
  • 1 egg (for egg wash)
  • 1 tbsp water (for egg wash)
  • Yellow or Dijon mustard (for eyes)
  • Sliced black olives (optional, for eyes)
  • Marinara sauce (for dipping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine 1 lb ground beef, ½ cup breadcrumbs, 1 egg, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, ¼ tsp black pepper, 1 tbsp Worcestershire sauce, and ¼ cup Parmesan cheese (if using). Mix gently with your hands until just combined. Do not overmix.
  3. Roll the mixture into 16 small balls, about 1 inch (2.5 cm) in diameter. Place them on the prepared baking sheet, spaced about 1 inch apart.
  4. Bake the meatballs for 8 minutes. They should be lightly browned but not fully cooked through.
  5. While the meatballs bake, open the crescent roll can. Unroll the dough and separate it into 8 triangles along the perforations. Cut each triangle lengthwise into 3 thin strips (24 strips total).
  6. Remove the meatballs from the oven and let them cool for 2 minutes. Working with one meatball at a time, wrap a dough strip around it, leaving a small gap for the ‘eyes.’ Press the ends gently to seal. Repeat with all meatballs.
  7. In a small bowl, beat 1 egg with 1 tablespoon of water. Using a brush, lightly coat the dough strips.
  8. Return the baking sheet to the oven. Bake for 10-12 minutes, or until the dough is golden brown and the meatballs are cooked through (internal temp of 160°F / 71°C).
  9. Let the mummies cool for 5 minutes. Use a toothpick to dot two small eyes on each mummy with yellow mustard. (Optional: place a tiny slice of black olive over each mustard dot.)
  10. Serve warm with marinara sauce for dipping.

Notes

Do not overwork the meat mixture to keep meatballs tender. Chill the dough if it gets sticky. Leave a gap for the eyes when wrapping. Use a light hand with the egg wash to avoid soggy dough. Let mummies rest for 5 minutes before serving. For gluten-free, use gluten-free breadcrumbs and crescent dough. For a cheesy center, hide a small cube of mozzarella in each meatball.
