  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 packet (1 oz) taco seasoning or 23 tablespoons homemade blend
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) pinto beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup low-sodium chicken broth
  • 1 can (4 oz) diced jalapeños
  • 1 cup shredded Mexican blend or cheddar cheese
  • Tortilla chips for serving
  • Fresh lime juice (optional, for finishing)

Instructions

  1. Place the chicken at the bottom of the slow cooker. Sprinkle taco seasoning evenly over the chicken.
  2. Pour in the undrained diced tomatoes and tomato sauce. Stir gently to coat the chicken.
  3. Add the rinsed black beans, pinto beans, and corn. Stir to distribute ingredients evenly.
  4. Pour in the chicken broth and diced jalapeños. Stir to combine. Ensure liquid covers the chicken and beans.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Remove chicken from the pot and shred using two forks. Return shredded chicken to the slow cooker.
  7. Stir in the shredded cheese until melted and creamy. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, topped with crushed tortilla chips and a splash of lime juice.

Notes

Rinsing beans removes excess sodium and starch. For a thicker soup, mash some beans against the side of the pot. If using chicken breasts, check after 3 hours on high to prevent drying out. Freeze without cheese and chips for up to 3 months. Add lime juice at the end to brighten flavors.
