Easy Crockpot Honey Garlic Chicken Thighs (Set & Forget)

Fall-apart tender chicken thighs in a glossy, sticky honey garlic sauce, made with minimal effort in the slow cooker. Perfect for busy weeknights.

  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/3 cup (113g) honey
  • 1/4 cup (60ml) low-sodium soy sauce
  • 45 cloves garlic, minced
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) sesame oil
  • 2 tablespoons (16g) cornstarch
  • 2 tablespoons (30ml) water
  • Optional garnish: sliced green onions, sesame seeds, extra honey

Instructions

  1. In a small bowl, whisk together 1/3 cup honey, 1/4 cup soy sauce, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, and minced garlic. Set aside about 2 tablespoons of this mixture for later.
  2. Place chicken thighs in the bottom of a 4-6 quart crockpot in a single layer. Season lightly with black pepper.
  3. Pour the sauce mixture over the chicken, coating each piece.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until chicken is fork-tender.
  5. About 30 minutes before serving, mix 2 tablespoons cornstarch with 2 tablespoons cold water until smooth.
  6. Remove chicken from the crockpot and set aside. Turn crockpot to HIGH. Whisk in the cornstarch slurry and cook uncovered for 5-10 minutes, stirring occasionally, until sauce thickens. Stir in the reserved 2 tablespoons of sauce.
  7. Return chicken to the crockpot and toss to coat. Let sit for 5 minutes.
  8. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

For best texture, cook on LOW. Don’t skip the cornstarch slurry—it thickens the sauce. Add a portion of honey at the end for a glossy finish. Chicken thighs are preferred over breasts for tenderness.
