This easy crockpot buffalo chicken dip with cream cheese is the ultimate crowd-pleaser—creamy, tangy, and perfectly spicy. Made with simple ingredients and minimal effort, it’s perfect for game day, parties, or a cozy night in.

Ingredients

Scale
  • 2 (8 oz) blocks cream cheese, softened to room temperature
  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese, divided
  • 2 tablespoons unsalted butter
  • Optional: 1/4 cup chopped green onions or chives, for garnish
  • Salt and black pepper, to taste

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and bones, then shred meat with two forks or your hands to get 2 cups. If cooking from scratch, poach 2 boneless, skinless chicken breasts in simmering water for 15-18 minutes until cooked through, then shred.
  2. Soften the cream cheese: Take cream cheese out of fridge about 30 minutes before starting. Cut into cubes to speed softening.
  3. Combine ingredients in slow cooker: Add softened cream cheese, shredded chicken, buffalo sauce, ranch dressing, half of the shredded cheddar cheese (1/2 cup), and butter. Don’t stir yet.
  4. Cook on low: Set slow cooker to low heat and cook for 2 hours. After first hour, stir well to combine ingredients.
  5. Stir again and add remaining cheese: After 1 hour and 45 minutes, stir dip until completely smooth and creamy. Sprinkle remaining 1/2 cup cheddar cheese on top. Cover and cook final 15 minutes until cheese is melted and bubbly.
  6. Garnish and serve: Sprinkle with chopped green onions or chives if desired. Serve warm straight from slow cooker or transfer to a serving bowl.

Notes

For best texture, always use room temperature cream cheese and stir halfway through cooking. This dip can stay on ‘warm’ setting for up to 2 hours after cooking. Leftovers taste even better the next day. For a stovetop version, combine all ingredients in a saucepan over low heat for 15-20 minutes, stirring frequently.
