Ingredients

Scale
  • 2–3 pounds beef chuck roast, cut into 1-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) crushed tomatoes
  • 3 tablespoons tomato paste
  • 1 cup low-sodium beef broth
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1–2 chipotle peppers in adobo sauce, minced (optional, for heat)
  • 1 jalapeño, diced (optional, for heat)
  • 1 tablespoon avocado or vegetable oil (for searing)

Instructions

  1. Cube the chuck roast into 1-inch pieces and pat dry with paper towels. Season generously with salt and pepper.
  2. Heat a large skillet over medium-high heat with 1 tablespoon of oil. Working in batches, sear the beef cubes on all sides until deeply browned, about 3-4 minutes per batch. Transfer seared beef to a 6-quart slow cooker.
  3. Reduce heat to medium. Add diced onion to the same skillet and cook for 3-4 minutes, scraping up browned bits. Add minced garlic (and diced jalapeño if using) and cook for 30 seconds until fragrant. Pour a splash of beef broth into the skillet to deglaze, then transfer the mixture to the slow cooker.
  4. To the slow cooker, add diced tomatoes (undrained), crushed tomatoes, tomato paste, remaining beef broth, chili powder, cumin, smoked paprika, dried oregano, and chipotle peppers (if using). Stir until tomato paste is fully incorporated.
  5. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours. Do not lift the lid during cooking.
  6. About 1 hour before serving, drain and rinse the kidney beans and stir them into the chili. Let them heat through.
  7. After cooking, use tongs or two forks to shred the beef chunks directly in the slow cooker. Stir well. Taste and adjust seasoning with salt, pepper, or hot sauce as needed.
  8. Ladle into bowls and serve with desired toppings such as shredded cheddar cheese, sour cream, sliced green onions, fresh cilantro, and pickled jalapeños.

Notes

For best flavor, sear the beef before adding to the slow cooker. Add beans in the last hour to prevent mushiness. Chili tastes even better the next day. Freezes well for up to 3 months. To thicken, mash some beans or use a cornstarch slurry. Use low-sodium broth and rinse beans to control salt.
