Instructions

  1. Soften the cream cheese: Take your cream cheese out of the fridge about 30 minutes before you start. Cut it into small cubes and let it sit at room temperature.
  2. Melt the butter: Place your medium saucepan over medium heat. Add the ½ cup of unsalted butter and let it melt completely, swirling the pan occasionally. Don’t let it brown.
  3. Add the brown sugar: Pour in the 1 cup of packed light brown sugar and stir constantly for about 2-3 minutes until the sugar dissolves and the mixture becomes smooth and bubbly.
  4. Pour in the heavy cream: Slowly drizzle in the ½ cup of heavy cream while stirring. Keep stirring for another 2-3 minutes until everything comes together into a smooth, amber-colored sauce.
  5. Remove from heat: Take the saucepan off the burner. Let it cool for about 2 minutes.
  6. Mix the cream cheese: While the caramel cools slightly, place your softened cream cheese in a mixing bowl. Beat it with a hand mixer on medium speed for about 1 minute until smooth and fluffy.
  7. Combine everything: Pour the warm caramel into the bowl with the cream cheese. Add the 1 teaspoon of vanilla extract and ¼ teaspoon of sea salt. Beat on low speed until fully combined and silky smooth (about 30 seconds).
  8. Fold in the toffee bits: Using a spatula, gently fold in ½ cup of toffee bits. Reserve a tablespoon or two for topping.
  9. Transfer to serving bowl: Spoon the dip into your serving bowl. Smooth the top and sprinkle reserved toffee bits and a pinch of flaky sea salt if using.

For best results, use room temperature cream cheese to avoid lumps. If the dip is too thin, let it cool; if too thick, stir in a tablespoon of warm heavy cream. To keep apple slices from browning, toss them in cold water with a tablespoon of lemon juice for 5 minutes, then drain and pat dry.
