  • 1.5 pounds Yukon Gold potatoes (about 4 medium), cut into ½-inch cubes

  • ½ cup heavy cream
  • 1 bunch lacinato kale (about 4 cups chopped), stems removed and leaves chopped
  • ½ teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • Optional: grated Parmesan cheese, fresh parsley, crusty bread for serving

Instructions

  1. Prep all ingredients: dice onion, mince garlic, cube potatoes (keep in cold water to prevent browning), and chop kale.
  2. Heat olive oil in a large Dutch oven over medium-high heat. Add Italian sausage, breaking it up with a wooden spoon. Cook undisturbed for 2-3 minutes, then continue cooking until browned, about 6-8 minutes total. Use a slotted spoon to transfer sausage to a plate, leaving about 1 tablespoon of rendered fat in the pot.
  3. Reduce heat to medium. Add diced onion to the pot and cook for 4-5 minutes, stirring occasionally, until soft and translucent. Add minced garlic and red pepper flakes, cook for 30 seconds until fragrant.
  4. Pour in chicken broth and add cubed potatoes. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to maintain a gentle simmer. Cover and cook for 10-12 minutes until potatoes are fork-tender.
  5. Stir in chopped kale (it will wilt significantly). Pour in heavy cream and stir to combine. Simmer for 2-3 minutes until kale is bright green and tender.
  6. Return cooked sausage to the pot. Stir and heat through for about 1 minute. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve immediately in bowls, topped with grated Parmesan cheese and fresh parsley if desired. Accompany with crusty bread.

Notes

For best results, don’t rush the browning of the sausage. Cut potatoes evenly for uniform cooking. Add kale just before the cream to keep it vibrant. Avoid boiling after adding cream to prevent curdling. Season gradually as sausage and broth contain salt. Let soup rest 10-15 minutes before serving for flavors to meld.
