A quick and easy homemade version of the popular Starbucks drink, featuring a rich cold brew base topped with a velvety, spiced pumpkin cream foam. Perfect for an afternoon pick-me-up.

Ingredients

Scale
  • 1 cup (240 ml) strong cold brew coffee concentrate
  • 1 cup ice
  • 1/4 cup (60 ml) heavy cream
  • 1/4 cup (60 ml) whole milk or oat milk
  • 2 tablespoons 100% pure pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1–2 tablespoons sweetener (sugar-free vanilla syrup, brown sugar, or maple syrup)
  • Extra pumpkin pie spice or cinnamon for garnish

Instructions

  1. Prepare the cold brew base by steeping coarse-ground coffee in cold water for 12-24 hours, then strain. Pour the cold brew over ice in a tall glass, filling it halfway.
  2. In a separate bowl, combine heavy cream, milk, pumpkin puree, pumpkin pie spice, vanilla extract, and sweetener.
  3. Using an electric milk frother or handheld mixer, beat the mixture on medium-high speed for 30-60 seconds until soft peaks form and volume has doubled.
  4. Slowly pour the pumpkin cream foam over the back of a spoon or directly into the center of the cold brew to create distinct layers.
  5. Lightly dust the top with extra pumpkin pie spice or cinnamon.
  6. Serve immediately with a straw, stirring the foam into the coffee as you drink.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie filling. For best texture, make the foam immediately before serving as it separates quickly. If the pumpkin puree clumps, microwave it with the milk for 10-15 seconds before mixing to help it emulsify.
