  • 810 slices deli ham
  • 46 slices American cheese (or provolone, Swiss, or sharp cheddar)
  • 4 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix (optional)
  • 23 leaves romaine or iceberg lettuce
  • 23 dill pickle spears

Instructions

  1. Soften the cream cheese: Remove cream cheese from fridge 30 minutes before starting. In a small bowl, mix softened cream cheese with ranch seasoning (if using) until smooth.
  2. Prep your tortillas: Lay one large flour tortilla flat on a cutting board. If stiff, microwave for 10 seconds to make pliable.
  3. Spread the base: Using a spatula or butter knife, spread a thin, even layer of the cream cheese mixture over the entire surface of the tortilla, all the way to the edges.
  4. Layer the ham: Lay down slices of deli ham, overlapping slightly to cover the entire tortilla.
  5. Add the cheese: Place cheese slices over the ham in a single even layer.
  6. Add the crunch (optional): Place lettuce leaves in a single layer over the cheese. Lay 2-3 dill pickle spears end-to-end along one edge of the tortilla, about an inch from the edge.
  7. The roll: Starting at the edge with the pickle spears, roll the tortilla tightly away from you, using firm, even pressure. Roll all the way to the end.
  8. Wrap and chill: Place the rolled tortilla seam-side down on plastic wrap. Wrap tightly, twisting the ends. Refrigerate for at least 30 minutes, or up to 2 hours.
  9. Slice and serve: Unwrap the roll and place on a cutting board. Trim off the ends, then slice into 1-inch thick pinwheels using a sharp serrated knife with a gentle sawing motion.

Notes

Don’t skip the chilling step! It allows the cream cheese to firm up and hold the shape. Use a serrated knife for clean slices. The cream cheese spread acts as a waterproof barrier to prevent soggy tortillas. These pinwheels taste even better the next day as flavors meld.
