  • 1 teaspoon Dijon mustard
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
  2. In a small bowl, mix together brown sugar, soy sauce, Dijon mustard, and minced garlic until combined into a thick paste.
  3. Heat a large skillet (cast iron or stainless steel) over medium-high heat. Add olive oil and let it get shimmering hot, about 2 minutes.
  4. Sear the pork chops for 3-4 minutes on the first side without moving them, until a golden crust forms.
  5. Flip the pork chops and cook for another 2-3 minutes on the second side. The internal temperature should be around 130°F.
  6. Reduce heat to medium-low. Add butter to the pan and let it melt, then spoon the brown sugar mixture over the pork chops, spreading it evenly over the tops.
  7. Cook for another 2-3 minutes, basting the pork chops with the pan juices as they bubble. The glaze will thicken and caramelize.
  8. Check the internal temperature with a meat thermometer; it should read 140-145°F when you pull them from the pan.
  9. Remove the pork chops from the pan and transfer to a cutting board. Let them rest for 5 minutes before serving. Spoon any remaining pan juices over the top.

Notes

Do not skip the resting step—it allows juices to redistribute. If the glaze starts to burn, add a splash of water or chicken broth. For best results, use pork chops at least 1 inch thick and let them come to room temperature before cooking.
