This Easy Apple Cider Mimosa with Cinnamon Rim is a three-ingredient, two-minute cocktail that tastes like autumn in a champagne flute. The sparkle from the prosecco cuts through the apple cider’s sweetness, and the cinnamon-sugar rim adds warmth with every sip.

Ingredients

  • Apple cider (chilled)
  • Prosecco or Champagne (chilled)
  • Ground cinnamon
  • Granulated sugar
  • Apple slice or cinnamon stick (for garnish, optional)

Instructions

  1. In a small shallow dish, combine 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon. Whisk together with a fork until evenly combined.
  2. In another small shallow dish, pour about a tablespoon of honey or maple syrup.
  3. Take a champagne flute and dip the rim into the honey, rotating gently so the entire rim gets coated. Let the excess drip off, then dip the rim into the cinnamon-sugar mixture. Press down gently and rotate so the sugar sticks evenly. Lift straight up and tap off any excess. Set aside and repeat with remaining glasses.
  4. Pour chilled prosecco into each glass until they are about halfway full.
  5. Slowly pour chilled apple cider into each glass until they are about three-quarters full. Pour slowly so the layers stay somewhat separate. Give it a gentle stir if desired.
  6. If using, garnish with a thin apple wedge or a cinnamon stick. Serve immediately.

Notes

Chill everything beforehand. Wet the rim evenly but not too heavily. Let rimmed glasses sit for about 30 seconds before pouring to let the sugar set. Serve immediately as bubbles fade and rim gets soggy after about 15 minutes. For a non-alcoholic version, swap prosecco for sparkling apple cider or ginger ale. For a stronger drink, add half an ounce of bourbon before the prosecco.
