Crispy, juicy garlic butter chicken thighs ready in 30 minutes with simple pantry ingredients. A one-skillet wonder that delivers restaurant-quality results every time.

Ingredients

Scale
  • 4–6 bone-in, skin-on chicken thighs (about 2 pounds)
  • 4 tablespoons unsalted butter, softened
  • 6–8 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (optional)
  • ¼ cup low-sodium chicken broth
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the chicken: Remove chicken thighs from fridge, pat completely dry with paper towels. Let sit at room temperature for 10 minutes. Season both sides generously with salt, pepper, paprika, and garlic powder.
  2. Preheat oven to 400°F (200°C). If cooking entirely on stove, skip this step.
  3. Heat a large oven-safe skillet over medium-high heat. Add olive oil and 2 tablespoons butter. Once melted and sizzling, place chicken skin-side down. Cook undisturbed for 5-6 minutes until deep golden brown and crispy.
  4. Flip chicken using tongs. Add remaining 2 tablespoons butter and minced garlic to pan around chicken. Cook 1-2 minutes, spooning garlic butter over chicken.
  5. Transfer skillet to preheated oven. Roast 12-15 minutes until internal temperature reaches 165°F (74°C). If cooking entirely on stove, reduce heat to medium-low, cover, and cook 10-12 minutes, flipping halfway.
  6. Remove chicken from skillet and set aside. Place skillet over medium heat, add chicken broth, and scrape up browned bits. Simmer 2-3 minutes until slightly reduced. Swirl in any remaining butter.
  7. Let chicken rest 5 minutes before serving. Pour pan sauce over top and garnish with fresh parsley.

Notes

Pat chicken completely dry for crispy skin. Don’t move chicken too early; it will release naturally when seared. Let chicken rest 5 minutes before cutting. If garlic browns too quickly, remove from pan and add back at end. Double garlic if desired. Add lemon juice at end for brightness.
