A quick and easy ramen noodle stir-fry that comes together in just 10 minutes. Perfect for busy weeknights, this dish uses instant ramen, fresh vegetables, and a savory sauce for a satisfying meal.

  • 2 packets instant ramen noodles (discard seasoning packets)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce (low-sodium if desired)
  • 1 tablespoon oyster sauce (optional; substitute hoisin sauce)
  • 1 tablespoon sesame oil (toasted)
  • 1 tablespoon rice vinegar (unseasoned)
  • 1 teaspoon brown sugar
  • 1 clove garlic, minced
  • 1 teaspoon fresh ginger, grated (optional)
  • ¼ teaspoon red pepper flakes
  • 1 cup mixed vegetables (bell peppers, shredded carrots, snap peas, broccoli, mushrooms, bok choy, etc.)
  • ½ cup protein (cooked chicken, shrimp, tofu, edamame, or a fried egg)
  • 2 scallions, sliced (for garnish)
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Boil the noodles: Bring a medium pot of water to a rolling boil. Add the ramen noodles (discard seasoning packets) and cook for exactly 2 minutes. Drain and rinse with cold water. Toss with a drizzle of sesame oil to prevent sticking. Set aside.
  2. Mix the sauce: In a small bowl, whisk together soy sauce, oyster sauce (if using), rice vinegar, brown sugar, minced garlic, grated ginger, and red pepper flakes. Adjust to taste.
  3. Prep veggies and protein: Slice vegetables and protein into uniform pieces. If using raw protein, slice thin.
  4. Heat the pan: Place a large non-stick skillet or wok over high heat. Add vegetable oil and swirl to coat. Heat until shimmering.
  5. Cook aromatics: Add fresh garlic and ginger to the hot oil. Stir constantly for 15-20 seconds until fragrant.
  6. Stir-fry vegetables: Add vegetables and toss constantly for 1-2 minutes until bright and slightly tender. For harder vegetables, add a tablespoon of water and cover for 30 seconds.
  7. Add protein: Push vegetables to the sides. Add raw protein to the center and cook until done. If using pre-cooked protein, toss in and warm for 30 seconds.
  8. Add noodles: Push everything to the sides. Add noodles to the center and let sit undisturbed for 20 seconds to create a slight char. Toss together.
  9. Pour in sauce: Drizzle sauce over everything and toss vigorously with tongs. Cook for 20-30 seconds until sauce thickens and glazes.
  10. Finish and serve: Drizzle with toasted sesame oil, toss once more. Transfer to bowls. Top with sliced scallions and sesame seeds. Serve immediately.

Notes

Don’t overcook the noodles—boil for exactly 2 minutes. Use high heat for best results. Prep all ingredients before starting. Use cold noodles after rinsing. Don’t overcrowd the pan. Add sauce at the end. For a gluten-free version, use tamari and gluten-free ramen.
