Fluffy, festive pumpkin pancakes with chocolate chip eyes that are quick to make and perfect for Halloween breakfasts or brunches.

Ingredients

Scale
  • 1 cup All-Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Salt
  • 1 cup Pumpkin Puree (100% pure, not pie filling)
  • 1 cup Buttermilk (or milk with 1 tbsp lemon juice)
  • 1 Large Egg
  • 2 tbsp Melted Butter
  • 1 tsp Vanilla Extract
  • Semi-sweet or milk chocolate chips (for eyes)

Instructions

  1. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
  2. In a large bowl, whisk the buttermilk, egg, melted butter, vanilla extract, and pumpkin puree until smooth and uniform.
  3. Pour the dry ingredients into the wet ingredients. Gently fold them together with a rubber spatula until just moistened. Do not overmix; small lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Grease lightly with butter or oil.
  5. Pour about 1/4 cup of batter onto the hot pan for each pancake. Immediately place two chocolate chips on top to form eyes.
  6. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  7. Carefully flip the pancakes and cook the other side until golden brown, about 1-2 minutes more.
  8. Serve immediately with maple syrup, whipped cream, or extra chocolate chips.

Notes

Ensure pumpkin puree is not watery; strain if necessary. Use room temperature ingredients for better mixing. Do not press down on pancakes while cooking. Keep finished pancakes warm in a 200°F oven if cooking for a crowd.
