These crispy football pretzel bites are made with a shortcut using frozen dinner rolls, delivering a beautifully bronzed, slightly chewy exterior with a soft, pillowy center. Paired with a velvety, sharp beer cheese dip, they are the ultimate game-day snack that disappears before halftime.

Ingredients

Scale
  • 12 frozen dinner rolls, thawed but still cold
  • ¼ cup baking soda
  • 1 large egg, beaten
  • 2 tablespoons coarse sea salt
  • 3 tablespoons unsalted butter, melted
  • 8 ounces sharp cheddar cheese, freshly grated
  • ¾ cup beer (light lager or pilsner)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ½ cup whole milk
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Prepare your frozen dinner rolls: If fully frozen, let them sit at room temperature for about 15-20 minutes until just pliable. Using a sharp knife or kitchen shears, cut each roll into 4 equal pieces to yield about 48 small dough pieces.
  3. Bring a large pot of water to a rolling boil. Add ¼ cup of baking soda to the boiling water and stir to dissolve completely.
  4. Working in batches of 8-10 pieces, drop the dough pieces into the boiling water. Boil for exactly 30 seconds, flipping halfway through with a slotted spoon.
  5. Remove the boiled dough pieces with a slotted spoon and place them on the prepared baking sheet, spacing them about 1 inch apart. Repeat with remaining dough.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Brush the egg wash over each pretzel bite. Sprinkle generously with coarse sea salt while the egg wash is still wet.
  7. Bake for 12-15 minutes, rotating the baking sheet halfway through, until deep golden brown and puffed. Remove from oven and immediately brush with melted butter.
  8. While the pretzel bites are baking, make the beer cheese dip: In a small saucepan over medium heat, melt 2 tablespoons of butter. Whisk in the flour and cook for 1 minute, stirring constantly.
  9. Slowly pour in the beer while whisking continuously. Then pour in the milk, still whisking. Continue cooking for 2-3 minutes until smooth and slightly thickened.
  10. Reduce heat to low. Add the grated cheddar cheese a handful at a time, stirring constantly until each addition is fully melted before adding the next. Stir in Dijon mustard, garlic powder, smoked paprika, and a pinch of black pepper. Taste and adjust seasoning.
  11. Keep the cheese dip warm over very low heat, stirring occasionally. If it thickens too much, thin with a splash of warm milk or beer.
  12. Transfer the baked pretzel bites to a serving platter and pour the warm beer cheese dip into a small bowl. Serve immediately.

Notes

The boiling water bath with baking soda is non-negotiable for the signature pretzel crust. Grate your own cheese for a smooth dip. Keep the cheese dip warm over low heat to prevent separation. For best results, serve immediately.
