Tender delicata squash rings with a crispy coating and sweet, nutty maple pecan crumble. A perfect fall side dish that’s quick, easy, and a crowd-pleaser.

  • 1 medium delicata squash (about 1 pound)
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 cup pecans, finely chopped
  • 3 tablespoons maple syrup
  • 2 tablespoons rolled oats
  • 1 tablespoon melted coconut oil
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Fresh thyme or rosemary for garnish (optional)
  • Flaky sea salt to finish (optional)
  • Drizzle of balsamic glaze (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly. Cut off both ends, then slice into 1/2-inch thick rings. Scoop out seeds and stringy pulp from the center of each ring.
  3. In a small dry skillet over medium heat, toast the chopped pecans for 2-3 minutes until fragrant. Transfer to a plate to cool.
  4. In a medium bowl, whisk together the all-purpose flour, garlic powder, smoked paprika, salt, and black pepper.
  5. In another medium bowl, combine the toasted pecans, maple syrup, rolled oats, melted coconut oil, cinnamon, and a pinch of salt. Stir until the mixture resembles wet sand.
  6. Dip each squash ring into the flour mixture, coating both sides evenly. Shake off excess flour and place on the prepared baking sheet.
  7. Lightly brush or rub each coated ring with olive oil.
  8. Press small spoonfuls of the maple pecan crumble onto the top of each ring (about 1-2 teaspoons per ring).
  9. Bake for 18-22 minutes, checking at the 10-minute mark. If the crumble browns too quickly, tent loosely with foil. Rings are done when squash is tender and coating is golden and crispy.
  10. Let cool on the baking sheet for 2-3 minutes. Sprinkle with flaky sea salt and fresh thyme if desired. Serve warm.

Notes

Don’t skip the flour coating; it helps the crumble stick. Ensure rings are uniform thickness for even cooking. For extra crunch, broil for the last 1-2 minutes. The crumble can be made up to 3 days ahead.
