A sophisticated fall brunch drink featuring reduced apple cider syrup mixed with sparkling wine, served in glasses rimmed with a sticky cinnamon-sugar blend for a crisp, spicy texture.

Ingredients

Scale
  • 2 cups unfiltered apple cider
  • 1 tablespoon granulated sugar (for reduction)
  • 1/2 cup granulated sugar (for rimming)
  • 1 tablespoon ground cinnamon (for rimming)
  • 1 bottle dry sparkling wine or champagne (chilled)
  • Water (for wetting glass rims)
  • Optional: Apple brandy or Calvados
  • Optional: Thin apple slices or cinnamon sticks for garnish

Instructions

  1. Pour 2 cups of apple cider into a small heavy-bottomed saucepan with 1 tablespoon of sugar.
  2. Bring to a simmer over medium-high heat, then reduce heat to medium-low.
  3. Simmer for 15-20 minutes, stirring occasionally, until the cider reduces by half to approximately 1 cup of syrup. Let cool completely.
  4. While the cider cools, mix 1/2 cup granulated sugar and 1 tablespoon ground cinnamon in a shallow bowl.
  5. Dip the rim of champagne flutes into a small bowl of water to moisten the edge.
  6. Immediately dip the wet rim into the cinnamon-sugar mixture, rolling gently to coat evenly. Tap off excess sugar.
  7. Pour 2-3 tablespoons of the cooled apple cider syrup into each prepared glass.
  8. Slowly pour in chilled sparkling wine down the side of the glass to preserve bubbles.
  9. Garnish with an apple slice or cinnamon stick and serve immediately.

Notes

The cider syrup can be made ahead and stored in the refrigerator for up to two weeks. Do not store assembled mimosas as they will go flat. Ensure the glass rim is moist but not dripping for the sugar to stick properly. Use dry brut champagne to balance the sweetness.
