Ingredients

Scale
  • 4 large russet potatoes
  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo wing sauce
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • Olive oil or avocado oil for rubbing potatoes
  • 1/2 cup sour cream or Greek yogurt (for dip)
  • 1/4 cup buttermilk (for dip)
  • 1/2 teaspoon dried dill (for dip)
  • 1/4 teaspoon garlic powder (for dip)
  • Salt and pepper to taste (for dip)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil. Prick each potato 4-5 times with a fork.
  2. Rub potatoes with olive oil and sprinkle with salt. Bake directly on oven rack or on baking sheet for 45-60 minutes until tender.
  3. In a small bowl, whisk together buffalo wing sauce, melted butter, garlic powder, and onion powder.
  4. Shred cooked chicken and place in a medium bowl. Pour buffalo sauce mixture over chicken and toss to coat.
  5. Let baked potatoes cool for 5-10 minutes. Slice each in half lengthwise. Scoop out flesh, leaving a 1/4-inch thick shell.
  6. Optional: Return potato skins to oven for 5-7 minutes to dry them out.
  7. Divide buffalo chicken mixture among the 8 potato halves. Top with shredded cheddar cheese and blue cheese if using.
  8. Turn oven to broil. Place baking sheet on top rack, 4-6 inches from heating element. Broil for 2-4 minutes until cheese melts and browns.
  9. Remove from oven, sprinkle with sliced green onions. Serve hot with ranch or blue cheese dip.

Notes

Use full-fat cheese for best melting. Don’t skip drying the potato skins for extra crispiness. Broil on top rack for best results. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or air fryer.
