This recipe delivers perfectly crispy, juicy pork chops with a rich herb butter, all made in one pan. It’s a quick and easy weeknight dinner that tastes like home.

Ingredients

Scale
  • 4 bone-in pork chops, about 1-inch thick
  • Kosher salt and black pepper, to taste
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • 1/2 teaspoon lemon zest

Instructions

  1. Prep the Pork (15 minutes before cooking): Take your pork chops out of the fridge and pat them bone-dry with paper towels. Season generously on all sides with kosher salt and black pepper. Let them sit at room temperature for about 15 minutes.
  2. Make the Herb Butter: While the chops are resting, combine the softened butter, chopped parsley, thyme, rosemary, and lemon zest in a small bowl. Mix it all together with a fork until well combined. Set aside at room temperature.
  3. Preheat and Prep the Coating: Preheat your oven to 400°F (200°C). In a shallow dish, whisk together the all-purpose flour, garlic powder, and smoked paprika.
  4. Dredge the Chops: Dredge each seasoned pork chop in the flour mixture, pressing gently to make sure it adheres. Shake off any excess flour.
  5. Sear the Chops: Place your large oven-safe skillet over medium-high heat and add the olive oil. Once the oil is shimmering, carefully lay the pork chops in the skillet. Sear for 3-4 minutes per side, until a deep golden-brown crust forms.
  6. Bake to Finish: Transfer the skillet to the preheated oven. Bake for 8-12 minutes, depending on thickness. The internal temperature should reach 145°F (63°C) when measured with an instant-read thermometer.
  7. Rest and Top: Remove the skillet from the oven. Immediately top each hot pork chop with a generous dollop of the herb butter. Let the chops rest in the pan for 5 minutes before serving.

Notes

For best results, use bone-in pork chops about 1-inch thick. Pat the chops completely dry before seasoning to ensure a crispy crust. Let the chops rest for 5 minutes after baking to allow juices to redistribute. The herb butter can be made up to 3 days in advance.
