These crispy air fryer pork chops are quick, easy, and packed with flavor from a garlic herb rub. Perfect for busy weeknights, they deliver a golden, crackly crust and juicy interior every time.

Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary, crushed
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil
  • Pinch of cayenne pepper (optional)

Instructions

  1. Pat the pork chops dry with paper towels to remove as much moisture as possible from both sides.
  2. In a small bowl, combine garlic powder, dried oregano, dried thyme, crushed rosemary, kosher salt, and black pepper. Add a pinch of cayenne if desired. Stir to combine.
  3. Rub a light coating of olive oil over both sides of each pork chop. Sprinkle the rub generously over both sides, pressing it into the meat so it adheres.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Place the seasoned pork chops in a single layer in the air fryer basket, ensuring they do not overlap. Cook in batches if necessary.
  6. Air fry at 400°F for 5 minutes. Flip the chops using tongs and cook for another 3-5 minutes, until the internal temperature reaches 145°F (63°C) when measured with a meat thermometer.
  7. Transfer the cooked pork chops to a cutting board and let them rest for 5 minutes before serving.
  8. Serve immediately, sliced against the grain if desired.

Notes

Patting the pork chops dry is crucial for achieving a crispy crust. Use a meat thermometer to avoid overcooking; the USDA recommends an internal temperature of 145°F followed by a 3-minute rest. For bone-in chops, increase cooking time by 2-3 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the air fryer at 350°F for 3-4 minutes.
