  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon

  • Pinch of cayenne pepper (optional)
  • Few drops of vanilla extract (optional)

Instructions

  1. Clean the seeds thoroughly if using fresh ones, then pat them completely dry with paper towels to ensure crispiness.
  2. Preheat the air fryer to 325°F (160°C) for about 3 minutes.
  3. Melt the butter or coconut oil in a small saucepan or microwave-safe bowl.
  4. Place the dry pumpkin seeds in a large bowl and pour the melted fat over them, tossing to coat evenly.
  5. Sprinkle brown sugar, cinnamon, salt, and optional cayenne or vanilla over the seeds, tossing until evenly coated.
  6. Spread the seeds in a single layer in the air fryer basket.

  8. Remove when golden brown and fragrant; they will crisp up further as they cool.
