Golden, crispy, and creamy buffalo chicken bites that are easy to make in 15 minutes. Perfect for game day or a quick snack.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce, plus extra for drizzling
  • 1 cup shredded cheddar cheese
  • 1 cup panko breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup ranch dressing (for dipping)
  • 1 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine softened cream cheese, shredded chicken, buffalo sauce, shredded cheddar cheese, and garlic powder. Mix until well combined into a thick paste.
  3. Roll the mixture into bite-sized balls (about 1 inch in diameter), yielding 20-24 bites. Place on the prepared baking sheet.
  4. Set up an assembly line with the beaten egg in one shallow bowl and panko breadcrumbs in another.
  5. Roll each chicken ball in the beaten egg, then coat thoroughly in panko breadcrumbs, pressing gently to adhere.
  6. Place coated bites back on the baking sheet, ensuring space between them for air circulation.
  7. Bake for 12-15 minutes until golden brown and crispy.
  8. Remove from oven and let cool for 2-3 minutes to firm up before serving with ranch or blue cheese dressing.

Notes

Ensure chicken is cold before mixing to prevent cream cheese from melting. Keep hands dry when rolling to prevent sticking. Do not overcrowd the baking sheet. For extra crispiness, spray tops with cooking spray before baking. Can be frozen before baking and cooked from frozen by adding 2-3 minutes to cook time.
