Ingredients

Scale
  • 1 pound lean ground beef (90/10)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 (28-ounce) can crushed tomatoes
  • 1 (6-ounce) can tomato paste
  • 1 (32-ounce) carton low-sodium beef broth
  • 1 cup water
  • 8–10 dry lasagna noodles, broken into pieces
  • 1 (15-ounce) container whole milk ricotta cheese
  • 1 large egg
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break apart with a wooden spoon. Cook for 5-7 minutes until no longer pink. Drain excess grease if necessary.
  2. In the same skillet, add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and Italian seasoning; stir for 1 minute until fragrant.
  3. Transfer the meat and onion mixture to a 6-quart slow cooker. Add crushed tomatoes, tomato paste, beef broth, water, and red pepper flakes. Stir until tomato paste is dissolved.
  4. Break lasagna noodles into thirds or quarters and add to the slow cooker. Stir gently to submerge noodles in the liquid.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours. Check noodles at the 3-hour mark if cooking on HIGH to prevent mushiness.
  6. While soup cooks, whisk ricotta cheese, egg, half of the Parmesan cheese, and a pinch of salt and pepper in a small bowl until smooth.
  7. Once noodles are tender, turn off the slow cooker. Stir in fresh spinach and let residual heat wilt it for 2 minutes. Taste and adjust seasoning.
  8. Ladle hot soup into bowls. Top each serving with a dollop of the ricotta mixture, remaining Parmesan, and fresh basil if desired. Serve immediately.

Notes

For best results, brown the ground beef first to enhance flavor via the Maillard reaction. Do not stir the ricotta into the soup at the beginning; dollop it on top at the end to create creamy pockets. If the soup thickens too much upon storage, add a splash of water or broth when reheating. No-boil noodles can be used but may result in a chewier texture.
