  • 1 teaspoon pumpkin pie spice (or ½ teaspoon cinnamon + ¼ teaspoon each nutmeg, ginger, and cloves)

  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg, room temperature
  • ¼ cup sour cream, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×9-inch pan with parchment paper, leaving some overhang on two opposite sides. Lightly grease the parchment with butter or non-stick spray.
  2. In a food processor, pulse the gingersnap cookies until they become fine crumbs. (Or place them in a zip-top bag and crush with a rolling pin.) Transfer the crumbs to a medium bowl. Add the melted butter, sugar, and salt. Stir until the mixture looks like wet sand and holds together when pressed.
  3. Pour the crumb mixture into your prepared pan. Press it down firmly and evenly using the bottom of a measuring cup or a flat-bottomed glass. Bake for 10 minutes, then set aside to cool slightly.
  4. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, about 2 minutes. Add the sugar and beat again until combined. Add the pumpkin puree, egg, pumpkin pie spice, and vanilla. Mix on low speed until just combined—do not overmix.
  5. In a separate bowl, beat the remaining 8 ounces of cream cheese until smooth. Add the sugar, egg, sour cream, and vanilla. Mix until everything is silky and well combined.
  6. Pour the pumpkin filling over the pre-baked crust and spread it into an even layer. Then, drop spoonfuls of the cheesecake filling randomly over the top.
  7. Take a butter knife or skewer and gently drag it through the two fillings in a figure-eight pattern. Do about 6-8 passes—do not over-swirl.
  8. Place the pan in the preheated oven and bake for 35-40 minutes. The edges should be set and slightly puffed, but the center should still have a slight jiggle when you gently shake the pan.
  9. Let the bars cool on a wire rack for about 1 hour at room temperature. Then, transfer the pan to the refrigerator and chill for at least 4 hours, preferably overnight.
  10. Once fully chilled, use the parchment handles to lift the whole block out of the pan. Place it on a cutting board and use a sharp knife to slice into squares. Wipe the knife clean between each slice for clean cuts.

Room temperature ingredients are crucial for a smooth texture. Do not overmix the fillings to avoid cracks. The center should still jiggle when you remove from the oven—it will set as it cools.
