  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy or plant-based)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana, mashed
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the banana in a small bowl or directly in your jar until smooth with no large lumps.
  2. Add the milk, creamy peanut butter, maple syrup (or honey), and vanilla extract to the mashed banana. Stir until the peanut butter is fully dissolved.
  3. Add the rolled oats, chia seeds, and a pinch of salt. Stir well until all oats are coated.
  4. Seal the jar or container and refrigerate for at least 6 hours, preferably overnight.
  5. In the morning, stir the oats. If too thick, add a tablespoon or two of milk; if too thin, add extra oats and let sit for 30 minutes.
  6. Add desired toppings and enjoy cold or at room temperature.

Notes

For best texture, use rolled oats and mash the banana well. The chia seeds are optional but help create a pudding-like consistency. If meal prepping, add fresh banana slices each morning to prevent browning. The oats keep in the fridge for up to 5 days, but are best within 3 days.
