These creamy peanut butter banana overnight oats are the perfect no-cook breakfast that comes together in just 5 minutes. Made with simple ingredients like rolled oats, ripe banana, and peanut butter, they deliver a pudding-like texture and balanced sweetness without any added sugar.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1 medium ripe banana (with brown spots)
  • 2 tablespoons (32g) creamy peanut butter
  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) Greek yogurt (optional, but recommended)
  • 1 tablespoon (12g) chia seeds
  • 1–2 teaspoons maple syrup or honey (optional)
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, dark chocolate chips, chopped peanuts, cinnamon

Instructions

  1. Mash the banana thoroughly in a jar or small bowl with a fork until mostly smooth with a few tiny chunks.
  2. Add the peanut butter and Greek yogurt, stirring until combined (it will look a little clumpy).
  3. Pour in the milk and whisk or stir until the mixture is smooth and the peanut butter is fully incorporated.
  4. Add the rolled oats, chia seeds, salt, and optional sweetener. Stir until the oats are fully coated and chia seeds are distributed.
  5. Seal the jar and refrigerate for at least 4 hours, but preferably 8-12 hours (overnight).
  6. In the morning, stir well (chia seeds may settle at the bottom). If too thick, add a splash of milk. Top with desired toppings and serve cold.

Notes

Do not use quick oats or steel-cut oats. Mash banana very well to avoid cold slimy chunks. Let sit at least 4 hours for best texture. Stir before eating. Adjust milk if too thick or thin. Make multiple jars for meal prep (keeps up to 4 days).
