  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana, mashed (about 1/2 cup)
  • 3 tablespoons (48g) creamy peanut butter
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana: Peel one very ripe banana and place it in a medium mixing bowl. Use a fork to mash it until mostly smooth with just a few small lumps, almost baby food consistency.
  2. Add the wet ingredients: To the mashed banana, add 1 cup of milk, 1/4 cup of Greek yogurt, 3 tablespoons of creamy peanut butter, 1-2 tablespoons of maple syrup, and 1/2 teaspoon of vanilla extract. Whisk until the peanut butter is fully incorporated.
  3. Add the dry ingredients: Pour in 1 cup of rolled oats, 1 tablespoon of chia seeds, and a pinch of salt. Stir until everything is evenly combined.
  4. Portion into jars: Divide the mixture evenly between two 16-ounce mason jars or airtight containers, leaving about an inch of space at the top for toppings.
  5. Refrigerate overnight: Place the jars in the refrigerator for at least 6 hours, but preferably 8-12 hours.
  6. Add toppings before serving: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of warm peanut butter, chopped peanuts, cinnamon, and dark chocolate chips if desired.
  7. Eat immediately or take it to go: Serve cold straight from the fridge, or microwave for 30-45 seconds if you prefer warm oats.

Notes

Use ripe bananas with brown spots for best sweetness and creaminess. Stir natural peanut butter well before measuring. Don’t skip chia seeds—they create the pudding-like texture. For meal prep, leave toppings off until serving. Oats keep in the fridge for up to 5 days, but are best within 3 days.
