  • 1 cup uncooked wild rice blend
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 ribs celery, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Melt 2 tablespoons of butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the onions are translucent and the carrots start to soften.
  2. Stir in the minced garlic, dried thyme, and dried rosemary. Cook for 1 minute more, until fragrant.
  3. Sprinkle the 3 tablespoons of flour over the vegetables and stir constantly for 2 minutes to cook out the raw flour taste.
  4. Slowly add the 6 cups of chicken broth while stirring. Scrape up any browned bits from the bottom of the pot. Bring the mixture to a gentle boil.
  5. Stir in the 1 cup of wild rice blend and the 1.5 pounds of raw chicken (whole breasts or thighs). Add the bay leaf. Reduce the heat to low, cover, and let it simmer for 35-40 minutes until the rice is tender and starting to split open.
  6. Using tongs, transfer the cooked chicken to a cutting board. Let it rest for 2-3 minutes, then shred it with two forks.
  7. Return the shredded chicken to the pot. Stir in the 1 cup of heavy cream. Simmer for 5 more minutes, uncovered, until the soup thickens slightly. Taste and adjust salt and pepper.
  8. Remove the bay leaf. Ladle the soup into bowls and garnish with fresh parsley if desired.

Notes

The soup will thicken as it sits. If reheating leftovers, add a splash of broth or milk to loosen it up. For a dairy-free version, swap heavy cream with full-fat coconut milk. For a vegetarian version, skip the chicken and use vegetable broth, adding chickpeas or white beans for protein.
