Creamy Mary Me Chicken Soup: Easy Sun-Dried Tomato Recipe

Creamy Mary Me Chicken Soup - featured image

A rich, tangy, and comforting chicken soup featuring sun-dried tomatoes and heavy cream. This quick weeknight meal uses a technique of blending part of the soup to create a velvety texture without a roux.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup sun-dried tomatoes packed in olive oil, drained and chopped
  • 1 cup heavy cream
  • 2 cups low-sodium chicken broth
  • 4–5 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 1–2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Pat chicken pieces dry and season generously with salt and pepper.
  2. Heat olive oil in a large pot over medium heat. Add diced onions and a pinch of salt; cook for 5 minutes until soft and translucent.
  3. Add minced garlic and Italian seasoning; stir constantly for 1 minute until fragrant.
  4. Add chicken pieces to the pot and cook for 5-7 minutes, turning occasionally, until lightly browned.
  5. Add chopped sun-dried tomatoes and their oil to the pot. Stir to combine.
  6. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a gentle simmer.
  7. Reduce heat to low, cover, and simmer for 10 minutes until chicken is tender.
  8. Remove 1 to 1.5 cups of soup (avoiding too many chicken pieces) and blend until smooth using an immersion blender or regular blender. Stir the blended mixture back into the pot.
  9. Stir in heavy cream and heat through for 2-3 minutes. Do not boil vigorously.
  10. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh herbs if desired.

Notes

For a lighter version, swap heavy cream for half-and-half or milk, and use chicken breasts. For a vegan option, use vegetable broth, coconut cream, and tofu or chickpeas. The soup does not freeze well due to the cream; freeze the base without cream if meal prepping. Let the soup rest for 5 minutes before serving to allow flavors to settle.
