A rich, comforting, and creamy chicken soup made with sun-dried tomatoes, Parmesan cheese, and heavy cream. This easy 20-30 minute dinner is perfect for busy weeknights and delivers restaurant-quality flavor with minimal effort.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons unsalted butter (divided)
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped

Instructions

  1. Pat chicken breasts dry and season generously with salt, pepper, and Italian seasoning.
  2. Heat a large pot or Dutch oven over medium-high heat with 1 tablespoon of butter. Sear chicken for 5-6 minutes per side until golden brown. Remove chicken and set aside.
  3. Reduce heat to medium. Add remaining butter if needed, then sauté minced garlic and sun-dried tomatoes for 2-3 minutes until fragrant.
  4. Pour in chicken broth, scraping up browned bits from the bottom of the pot. Simmer for 2-3 minutes.
  5. Return chicken to the pot, reduce heat to low, cover, and simmer for 10-12 minutes until chicken is cooked through.
  6. Remove chicken and shred using two forks.
  7. Stir heavy cream, Parmesan cheese, and red pepper flakes into the pot. Simmer gently for 2-3 minutes until sauce thickens slightly.
  8. Add shredded chicken back to the pot, stir to coat, and heat through for 1 minute.
  9. Remove from heat, stir in fresh basil, and serve immediately.

Notes

Do not boil the cream vigorously to prevent separation. Searing the chicken adds depth of flavor. Taste before adding extra salt as sun-dried tomatoes and Parmesan are salty. Can be made in a slow cooker by searing chicken first, then cooking on low for 6-8 hours, adding cream and cheese in the last 30 minutes.
