Creamy Homemade Tomato Basil Soup (Easy 30-Minute Recipe)

A velvety, thick tomato basil soup made with simple pantry ingredients, ready in 30 minutes. Perfect for a cozy weeknight meal.

  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (28 ounces) whole peeled tomatoes (preferably San Marzano)
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup vegetable broth (low-sodium)
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, packed (plus more for garnish)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt (plus more to taste)
  • 1/4 teaspoon black pepper (freshly ground)
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Melt the butter in a large heavy-bottomed pot or Dutch oven over medium heat until it starts to foam slightly, about 2 minutes. Do not let it brown.
  2. Add the diced onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. Do not let it brown.
  3. Add the minced garlic and stir constantly for 30 to 60 seconds until fragrant.
  4. Add both cans of tomatoes (whole peeled and crushed). Use a spoon to break up the whole tomatoes into smaller pieces. Stir and bring to a gentle simmer.
  5. Add the vegetable broth, sugar, salt, pepper, and red pepper flakes (if using). Stir well, reduce heat to medium-low, and simmer uncovered for 15 minutes, stirring occasionally.
  6. Turn off the heat. Add the fresh basil leaves and stir. Let the residual heat wilt the basil for about 2 minutes.
  7. Using an immersion blender, blend the soup directly in the pot until completely smooth, about 2 to 3 minutes. (If using a countertop blender, let the soup cool for 5 minutes first, then blend in batches.)
  8. With the heat still off, pour in the heavy cream and stir until fully incorporated. Taste and adjust salt and pepper if needed.
  9. Ladle into bowls, garnish with fresh basil and a drizzle of cream if desired. Serve hot.

Notes

Don’t boil the soup after adding the cream to prevent separation. For a vegan version, swap butter for olive oil and heavy cream for full-fat canned coconut milk. The soup tastes even better the next day.
