A no-bake holiday dessert featuring a chewy gingerbread crust topped with a silky, tangy cream cheese filling and a spiced icing drizzle. Perfect for busy weeknights and holiday gatherings.

Ingredients

Scale
  • 1 box (15-18 oz) gingerbread cookie mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup heavy cream, cold
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup powdered sugar (for icing)
  • 1–2 tablespoons milk (for icing)
  • 1/2 teaspoon gingerbread spice (for icing)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease.
  2. In a medium bowl, combine gingerbread cookie mix, melted butter, ground ginger, and cinnamon. Stir until the mixture resembles wet sand.
  3. Transfer the mixture to the prepared pan and press firmly and evenly into the bottom using the bottom of a measuring cup. Place in the fridge to chill.
  4. In a large bowl, beat softened cream cheese and vanilla extract until smooth. Add powdered sugar and a pinch of salt, beating until combined.
  5. Slowly pour in cold heavy cream and beat on high speed for 2-3 minutes until stiff peaks form.
  6. Remove the pan from the fridge and spread the cream cheese filling evenly over the chilled crust.
  7. Refrigerate the bars for at least 2 hours, or overnight, until set.
  8. Whisk together 1/2 cup powdered sugar, milk, and gingerbread spice to create a drizzle-able icing.
  9. Drizzle the icing over the set bars and swirl with a toothpick if desired.
  10. Cut into squares using a sharp knife and serve chilled.

Notes

Ensure cream cheese is fully softened to avoid lumps. Do not overbeat the heavy cream to prevent separation. For clean cuts, dip the knife in hot water and wipe dry between cuts. The bars must chill for at least 2 hours to set properly. Can be stored in the fridge for up to 5 days or frozen for 2 months.
